Interesting little video put out by Aspen Snowmass about the sourcing of the meat they use in their mountain restaurants.  With a focus on land stewardship in the Roaring Fork Valley, Crystal River Meats might be a bit more expensive than factory raised options but it’s a hell of lot better for the environment and end consumer:
